Bruce started his career in the restaurant industry “unofficially” at the age of 4, where he would spend his weekends as a “greeter” at his grandmother’s restaurant the Rathskeller in Chicago, IL.After graduating school, Bruce worked for Levy Restaurants for 9 years starting as a Manager at Chestnut Street Grill, Spiaggia, and Bistro 110, then promoted to General Manager and Managing Partner at Lincoln Park Zoo, then Director of Operations for the Rose Garden, home of the Portland Trail Blazers. Bruce was also part of new opening and takeover accounts: Kiel Center, Jacobs Field, US Air Arena, Joe Robbie Stadium and McCormick Place Convention Center.
